Spicy Sweet Potato Mash

3 pounds fresh sweet potatoes, peeled and chopped into 1" cubes

1/2 cup butter, cut into pieces

1 to 2 Tbsp. minced canned chipotle peppers in adobo sauce

1/4 cup heavy cream

Salt to taste 

Place sweet potatoes in a large pot and add enough water to cover. Bring to a boil then reduce heat to medium. Simmer 12-15 minutes, or until potatoes are tender. Drain, but save approximately 1/2 cup of the cooking water.

Return potatoes to the pot.  Over the lowest heat setting, add butter, minced chipotle peppers and heavy cream. Using a potato masher, mash until smooth.  If needed, add some of the reserved water. Season with salt to taste.
